Zuccotti - Sicilian specialities with almond filling -Tuminello

Zuccotti are typical Sicilian biscuits made with crispy shortcrust pastry. The dough contains a soft, savoury centre of ground Avola almonds, cinnamon and zuccata, a delicious Sicilian pumpkin jam. This last ingredient is widely used in traditional local pastries to fill biscuits and cakes.

INGREDIENTS DOUGH: Wheat flour, butter, sugar, pasteurised egg yolk, fresh eggs, raising agents: disodium diphosphate, sodium bicarbonate; salt, natural flavourings.

INGREDIENTS FILLING (24% of total): Chopped Sicilian almonds (8% of total), vegetable purée (7.6% of total) (pumpkin, oranges, citron, pear, glucose-fructose syrup, sugar, flavourings, preservative: sulphur dioxide (as residue)), sugar, wildflower honey, maraschino liqueur, cinnamon, natural flavourings, sweetener: sorbitol, thickener: locust bean gum.
